Recipes for Yuzu Soy. 150 grams of soy sauce 50 grams of mirin 50 grams rice vinegar 40 grams yuzu juice 40 grams of sesame oil And anywhere from 50-100 grams of sugar depending on how sweet you like it. However, I try to stick to this ratio: 4 tbsp soy sauce 2 tbsp mirin (do not substitute with sake) 1 tbsp brown sugar Pineapple juice, garlic, ginger, and honey are all great ways to jazz up this sauce too. This is enough sauce for 2 people. Splash it over rice, dip fried tempura with it, or glaze it onto grilled or sauteed meats right before you’re done cooking (my preferred method)!"
