Romantic ruby red ravioli for Valentine’s Day! 🌹 These are inspired by a dish from Veneto called casunziei all’ampezzana—paper-thin half-moon ravioli filled with beets (some also with potatoes, turnips, and/or ricotta) and served with butter & poppy seeds. I’ll admit I don’t really like beets, but let me say this: these will turn any beet-hater into a beet-lover. Not only did I eat them all, but the next day I made MORE because they were that good.
